That's Poppin' Pepperoni Pizza

  • 1 lb fresh store-bought pizza dough
  • ⅔ cup quality store-bought pizza sauce
  • Pepperoni slices
  • 1 cup mozzarella cheese, grated
  • 1 tsp That's Poppin' Rub
  • Olive oil
SERVES: 4 | COOK TIME: 8 MINUTES
Instructions
Cut the dough ball in half and work each half into circles, approximately 8-inches in diameter, with either a rolling pin or your hands.
Place the dough on wax paper and lightly brush each side with olive oil. With a fork, prick the dough all over.
Prepare the grill for two zones, direct medium head (350° - 450°F).
Grill the pizza dough over direct heat until the dough begins to cook and is marked by the grill, approximately 1 to 2 minutes.
Return the pizza dough to the wax paper, grilled side up.
Top the pizzas with sauce, pepperoni, cheese, and That's Poppin' rub.
Grill the pizza over indirect heat, keeping the lid down, until the cheese has melted and the dough is cooked, approximately 5 to 6 minutes. Repeat with the second pizza.
